|
|
Following a perfect ripening, the harvest is undertaken by hand
by local workers. A 3 to 4 week maceration is then performed, depending
on the year, in order to draw out as much of the tannin as possible.
The fermentations is carried out in traditional vats. The wine is
aged for 2/3 years in oak casks and for 1/3 years in cement vats
with 3-monthly rotation corresponding to racking. The vintage is
assembled before bottling. The vinification is checked by M. Gilles
Pauquet, oenologist.
